Simple Healthy Chicken Noodle Soup






There is nothing better out there especially when we feel under the weather then this delicious and very simple chicken noodle soup. 
It is my go to comfort food!
I used to make it for my daughter since she was tiny, and she still loves it so much even now, she ask me to cook it for her sometimes.

I decided to make it today, as she isn’t feeling too well and I had some chicken legs left over to be used.

This is a good way to make kids eat veggies and the good thing about it is, you can adjust the soup to your liking. Its up to you what vegetables you decide to put in.
But don’t forget, more veggies, better taste.

We had to adjust it recently, due to my daughter’s food sensitivity. We had to make it as simple as possible but still enjoy it and thankfully it didn’t loose its delicious taste.

You can also use whatever pasta you like. I used different types of noodles before, but now to change things up and for fun I bought little stars pasta shapes. This is another way of making it interesting for the kids.

It's not only very healthy, full of vitamins but also filling. 
I normally eat the whole pot literally because I love it so much. Then I am full and uncomfortable and I need to lay down with belly like a barrel. Its pure greediness. 


Ingredients:

  • 1 full onion
  • 3 carrots
  • 3 stalks of celery
  • 2 chicken legs or other chicken peaces (ideally chicken on the bone for the best flavour)
  • handful of fresh parsley
  • 2-3 tsp of sea salt / or 2 bouillon whatever you prefer


You can add vegetables you prefer, you don’t have to use the same I used. Its just what I had at home at the time.

Veggies : You can use any you like, chopped up runner beans, spinach, corn kernels, green beans... I use onion to add flavour to the broth, remove it once the soup is done. Its optional if you want to add some fresh herbs. I had parsley from my garden so why not adding some in.




Chicken: For strong flavour, chicken on the bone is the best. Darker meat from the bone is where all the taste is, compare to the white breast meat but use what you have it will still work. However, you wouldn’t reach the same flavour with pre-cooked chicken peaces.


Broth: Its made from scratch, as the vegetables and chicken juices  combine together creating lovely flavour, with bit of salt you don’t really need any stock cubes. But adding stock cube to the water instead of salt won’t spoil it either. Its up to your preference.



Noodles: you can use any egg noodles, pasta shapes, whatever you like. I cook it in separate pot because pasta soaks up too much water from the soup after its cooked.





Instructions:

 1.  Dice all veggies and placed them into the pot. Use bigger pot.                      

 2.  Add an onion into the pot for the flavour. When soup is cooked,        remove the onion.

 3.  Put two chicken legs or chicken thighs, which ever you have at home into the pot to the vegetables.

 4.  Add enough water to fill up the pot to the top. Cover and bring to the boil. 

 5.  Once the soup starts to boil, reduce the heat to low and add 2-3 tsp of sea salt. You could skip the salt and add 2 chicken stock cubes instead. 


 6.  I cover it only half way leaving a little space for the steam to come out and simmer for around 40 minutes. 

 7.  While your soup is cooking, put a small pot of water to boil for the pasta or noodles. Boil, until soft then drain.


 8.  Just couple of minutes before the soup is cooked, put in handful of chopped parsley for flavour, taste the soup and add more salt if needed.

 9.  Once soup is cooked, remove the onion, and take the chicken out onto a plate. Pull the meat of the bone and add it back to the soup. 






When dishing out put pasta into the bowl and add soup.
