I decided to enjoy this cold November Sunday with baking some simple cupcakes and thought I could share my recipe with you all!

For 28 cupcakes you will need:

* 175g/6oz plain flour
* 1tbs baking powder
* 1tbs custard powder
* 175g/6oz butter,softened, or soft margarine
* 175g/6oz caster sugar
* 3 eggs, lightly beaten
* 1tsp vanilla extract
* raspberry jam
* icing sugar, for dusting

Preheat the oven to 190/gas mark 5. Put 28 paper cases into bun trays.
Sift the flour, baking powder and custard powder into a large bowl. Add the butter, caster sugar, eggs and vanilla extract and, using an electric mixer, beat together until smooth.

Spoon the mixture into the paper cases and place 1/2 teaspoon of the jam onto the centre of each, without pressing down.
Bake in the preheated oven for 15-20 minutes, or until risen, golden and firm to the touch. Transfer to a wire rack and leave to cool. Dust with the icing sugar.
